Fizz Feast Taster - Buck and Birch

As part of the run-up Fizz Feast on Saturday 19 November at Edinburgh Academy, now in its sixth year, we’re giving you a brief introduction to the fabulous feast and fizz exhibitors lined up to tantalise taste buds and please palates. 

  We are delighted to welcome Buck & Birch to Fizz Feast for the first time and explore the alchemy behind their botanical-based drinks. A love of the outdoors and a fascination for wild ingredients are at the heart of this brand’s innovative range of spirits. Founders Tom Chisholm and Rupert Waites launched their first drink, Aelder Wild Elderberry Liqueur, in 2016 with a run of 200 bottles. What began in a garden shed has evolved into a distillery and visitor centre in Macmerry, East Lothian, with a unique collection of spirits, liqueurs and cocktails that celebrate the best of Scotland’s wild flavours.

All of the drinks are made without the addition of artificial flavours or synthetic sweeteners, relying only on the natural flavours of the ingredients used. At Fizz Feast, make sure to try the award-winning Aelder Elixir, part of the Wilderness Liqueurs Collection. Perfect at the end of a meal, with cheese or a deliciously dark chocolate dessert, the dark stone fruits with hints of bitter chocolate and spice are gently warming, and it is beautifully presented in a black, clay bottle. Wild botanical spirit Birch is pure spirit married with raw sap and seasoned with wild birch flavours, while Rum & Cake, a Wild Spiced Sipping Rum, is dark rum infused with hogseed parkin before being cold filtered and laced with molasses and Scottish spice. Award-winning Amarosa is a Rosehip Rum Liqueur and is the ideal accompaniment to charcuterie, while Ana Birch Syrup Caramel Liqueur sounds as if it would be the perfect end to a meal. Fizz Feast is on Saturday 19 November 2022 at The Edinburgh Academy, 42 Henderson Row, Edinburgh. There are two sessions to choose from: 12-3pm and 4-7pm, and plenty of masterclasses.
