As part of the run-up to our fourth annual Fizz Feast on Saturday 16 November at Edinburgh Academy, we’re giving you a brief introduction to the fabulous food and fizz exhibitors lined up to tantalise taste buds and please palates.
Scotland is – and has been for some time now – experiencing a huge renaissance in the popularity of gin, which is why we are delighted to welcome back a home-produced favourite Caorunn Gin. So, in a sea of pretty bottles and bold botanicals, what is it that makes Caorunn stand out from the crowd?
This is a small batch, quadruple-distilled Scottish Gin personally crafted by one man, Gin Master Simon Buley. Using only the finest pure grain spirit, natural Scottish water and 11 botanical gin ingredients, he carefully oversees each and every bottle of Caorunn.
In 1,000 litre batches, the spirit is vaporised through the world’s only working Copper Berry Chamber. Constructed in the 1920s, the Chamber bears legacy to the time when all gin was produced using this slow, careful method.
A balanced mix of six traditional gin botanicals with five hand-foraged wild botanicals; Rowan Berry, Bog Myrtle, Dandelion, Heather and Coul Blush Apple from the Scottish Highlands, is spread across the perforated trays of the Copper Berry Chamber. The vaporised spirit then rises slowly through the chamber, allowing the vapours to soak up the fresh flavours and aromas.

It’s a slow, steady process resulting in a modern-day gin made in a traditional way that is designed to be savoured. The perfect serve is over ice with tonic and slices of red apple or mix things up with the Scottish Raspberry flavour. At Fizz Feast, you will most certainly be encouraged to do both…
Don't miss the Caorunn Gin Masterclass at 1.45pm when we're delighted to be welcoming non other than Distillery Tour Manager Gabrielle Balfour who will be giving an insight into the production and what makes Caorunn so special.
