As part of the run-up Fizz Feast on Saturday 19 November at Edinburgh Academy, now in its sixth year, we’re giving you a brief introduction to the fabulous feast and fizz exhibitors lined up to tantalise taste buds and please palates.We are delighted to welcome Ailsa Proverbs, MBE, and her delicious creation The Big Cheese Making Kit to the Feast Hall this year.

When Ailsa first tried making cheese at home, she had no idea her passion would grow into The Big Cheese Making Kit company and bring her an MBE for services to the Food Industry too!
Hooked on making cheese, Ailsa loved when friends and family said how good it was – they couldn’t believe she’d made it herself and wanted to give it a go too. Which is when the idea for easy, cheese making kits, that didn’t need lots of fancy equipment, started to take shape.
Lots of trial and error, tasting and testing, focus groups, recipe rewrites and much milk later, The Big Cheese Making Kit came to be.

The range stared with four kits and has grown to 14, including The Big Vegan Cheese Making Kit, The Goat’s Cheese Making Kit and The Scottish Crowdie Kit.
You can make 10 different cheeses with The Ultimate Cheese Making Kit, which comes with a range of herbs and spices, three cheese moulds and an easy-to-understand recipe book. There are enough ingredients to make 40 batches and the kit has a shelf life of 12 months.
