As part of the run-up to our fourth annual Fizz Feast on Saturday 16 November at Edinburgh Academy, we’re giving you a brief introduction to the fabulous food and fizz exhibitors lined up to tantalise taste buds and please palates.

In our opinion, when it comes to making the most of a foodie moment, you can’t do without a fine condiment, which is why we are delighted to welcome Fife-based business Trotter’s Independent Condiments to Fizz Feast for the first time.

Byam Trotter founded Trotter’s Independent Condiments in 2009. Having always dreamt of running his own business, the seed was planted by his parents who had come across the delicious condiment Mostarda on holiday in Italy. Unable to find a manufacturer in Scotland, Byam’s mum found a recipe online and whipped up a batch in the family kitchen.

Byam took over and started manufacturing from his parents’ Fife kitchen, selling his early products at the local Fife farmers’ markets and farm shops, and Trotter’s Independent Condiments was born.

The company now produces a unique range of seasonal condiments including winter treats Crab Apple Jelly, Christmas Chutney, and Spicy Plum and Apple Chutney, as well as year-round favourites Mostarda, Hot Pepper Jelly (which gets its kick from Scotch Bonnet Peppers) and Scottish Honey Mustard, to name a few.

Striving to be as green as possible, Trotters Independent Condiments reduces its carbon foot print by using local producers, using eco-friendly induction cooking, which means no wasted heat, and recycling whenever possible.

There is something to suit all tastes, from the sweet – Strawberry, Raspberry and Blackcurrant jams - to the savoury, Uncle Allan’s Chutney - a raw fruit chutney, which soaks in malt vinegar before maturing for at least a month – as well as the Mostarda that kicked everything off. And as for the Mojito Marmalade? That’s definitely on our must-try list.  Also, don't miss the exciting new Spice Girl Curry Kits - perfect for a cold winter's evening and so easy to use too.  With Christmas on the way don't forget these will make great presents as well as a welcome addition to the festive table.
