Fizz Feast 2023’s Feast Hall is full of delicious artisanal fayre that makes the perfect Christmas gift for foodiesThis year’s feast hall is set to be a sensation for the senses - we have every foodie want and need catered for. Our wonderful food producers are all based in Scotland and have an incredible range of delicacies to share. We know you will be impressed by the array of artisan talent on our doorstep.Try before you buy, taste something new, shop for Christmas presents, pick up a few extras for the festive season, or simply treat yourself. All our food producers are independent businesses, passionate about what they do, with a wonderful story to tell.This year’s exhibitors include several Fizz Feast regulars alongside a few new faces too. East Coast Cured
Launched by husband-and-wife team, Steven and Susie Anderson, in 2017, East Coast Cured specialises in the production of slow-cured Scottish meats. Supplying meats to some of Scotland’s best-known restaurants, you can also visit the popular deli in Leith.
By combining the best locally reared, high-welfare meats with carefully sourced ingredients, East Coast Cured produces a deliciously wide range. Inspired by traditional European production methods, this small business is free to be more inventive with recipes. Expect something exceptional, made with passion. Incredibly popular at last year’s Fizz Feast, we are delighted to see them back on the Feast Hall menu.

Edinburgh Fermentarium
Fermented foods are recognised worldwide for their health and digestive benefits, so it’s incredibly exciting to introduce Edinburgh Fermentarium, a local independent company which produces naturally fermented vegetables in small batches.
Founded by Ruth Munro in 2017, who had benefited from adding fermented foods to her diet and started making her own, Edinburgh Fermentarium developed from Ruth’s passion to share ferments with family and friends, which grew to a wider audience; the result is handmade, healthy, delicious, fermented condiments. The award-winning collection combines traditional techniques with a modern twist to offer delicious and healthy additions to meals. Ruth also runs fermenting courses, so be sure to chat with her on the day.

Bross Bagels
Montreal-born Larah Bross has brought the authentic Canadian bagel to life in Edinburgh in recent years and makes her first appearance at Fizz Feast this year. Her deliciously more-ish Montreal-style bagels will be available in easy-to-eat sizes – perfect when eating with one hand while the other holds a glass of fizz - and packed with deli-inspired fillings.
If you’ve ever been inspired by New York deli-style sandwiches, Larah takes her bagel experience to even greater heights. Expect everything from meat-filled to vegan options, full of flavour and ideal sustenance to fuel your fabulous fizz journey.

Hoods Honey
Founded by beekeeper George Hood in 1950 , this East Lothian company has been producing honey ever since. The family firm produces three distinctively delicious types of honey – Blossom, Wildflower and Heather. As well as honey, there is also honey mustard, hot pepper jelly, raspberry jam, and a range of dressings.
George’s son, Stuart Hood, is responsible for the company’s natural skincare, beeswax candles and honey soaps. With traditional pairings such as uplifting Mandarin & Grapefruit, you can also expect scents that are a little more unique, such as Prosecco & Strawberry. One to indulge the senses.

Isle of Mull Cheese & Spirit
The last remaining traditional farmhouse cheese from the Hebridean Islands, Isle of Mull cheese comes from the only dairy farm on the beautiful Isle of Mull. The small farm, called Sgriob-ruadh (pronounced Ski-brooah), is owned and run by the Reade family.
An artisan farmhouse cheese, Isle of Mull is a delicious hard white cheddar with a glorious crumbly texture. Made from unpasteurised milk from cows fed on grass and whisky grains from the Tobermory Distillery, the cheese is wrapped in cloth and aged for up to 12 months. Traditional cheesemaking at its best, this is a cheese that deserves to be recognised for its depth, flavour and individuality of taste.

Oui Knob of Butter
This wonderful small business has been crafting artisanal butter in Glasgow since 2021, supplying local customers as well as a starry range of Scottish restaurants. Using traditional methods and locally sourced ingredients, every butter has a rich, creamy texture.
For the first visit to Fizz Feast, you can expect everything from classic salted butter to innovative flavours – the type of glorious butters you want to dive into and that will elevate taste in everything from recipes to a simple slice of buttered sourdough. Try classic Sea Salt with its wonderfully delicate flavour; the award-winning Garlic & Herb, with a rich, fragrant taste; and Sriracha & Thyme, for a bold, spicy blend.

Pacari Chocolate
If you take even the slightest pleasure in good chocolate, we’re sure you will fall head over heels for Pacari. Vegan, 100% certified organic, soy, palm oil, gluten and GMO-free, Pacari chocolate is not only delicious, it supports local farmers in Ecuador by working with them directly.
From plain chocolate bars to those infused with fruits, herbs and spices, cacao paste and chocolate-covered fruits, to gift sets and fun-size bars, there is a lot to tempt tastebuds. Chocolate also works beautifully with certain sparkling wines - just ask on the day as the experts will be on hand to advise.

The Big Cheese Making Kit
Ailsa Proverbs, MBE, (for services to the food industry) returns to the Feast Hall for the second year with her delicious creation The Big Cheese Making Kit. It was Ailsa’s passion for cheesemaking that led to the launch of her business. Friends and family were so impressed with her cheesemaking results, they wanted to try too, which is where the idea for easy, cheese making kits, that didn’t need lots of fancy equipment, came from. From simple kits such as The Scottish Crowdie Kit, to gift sets such as The Ultimate Cheese Making Kit, there is everything you need to start your own cheese making revolution at home. Or help to kickstart someone else’s! Please do take to the opportunity to pick the brains behind these wonderful artisanal food businesses on the day – each one has incredible passion for their produce.
